Fried Shrimp Balls In Lemon Sauce / 鲜柠脆虾球

  • 150 g Shrimp paste
  • Oil for frying
  • Cornstarch for coating
  • 1 Fresh lemon
  • 1/4 tsp Salt
  • 10 g Sugar
  • 5 g White vinegar
  • 5 g Jiafan rice wine
  • 1/4 tsp Light soya sauce
  • 50 ml Stock,
  • 1/2 tbsp Starchy solution
  • 150克 虾胶
  • 适量 食用油
  • 适量 玉米淀粉
  • 1个 鲜柠檬
  • 1/4小勺 食盐
  • 10克 砂糖
  • 5克 白醋
  • 5克 加饭酒
  • 1/4小勺 生抽
  • 50毫升 上汤
  • 1/2大勺 湿淀粉水


  1. Shape the shrimp paste into 8 balls and lightly coat with cornstarch. Squeeze half lemon into juice, and decorate the edge of a serving plate with the remaining half lemon slices.
    将虾胶挤成虾丸状,粘淀粉。将柠檬一半挤出汁,另一半切成片摆盘装饰。
  2. Fill a frying pan with oil. Heat oil on highest heat setting until very hot. Lightly drop the shrimps balls into the heated oil and fry until lightly golden. Remove balls to paper toweling to drain excess oil from them.
    锅入适量油烧热后,轻轻投入虾球炸至金黄色捞出控油。

  3. Leave a bit of oil in the pan and add in squeezed lemon juice, stock, vinegar, sugar, wine, salt and soya sauce and cook until boiled. Thicken it with starchy solution. Place shrimp balls on a serving platter. Garnish with parsley or other raw vegetable.
    锅留少许底油,入柠檬汁,上汤,白醋,糖,加饭酒,盐,生抽烧滚,用湿淀粉勾芡,倒入虾球翻匀,上碟后用欧芹或是其它蔬菜装饰。
